Have you guys ever had a recipe that fails so hard it makes you question why you had that idea in the first place? I have before, and I added another one to the list today.
I was SO excited to make the popcorn recipe I had in mind. I had a plan, knew the ingredients I wanted to use and even had the photo all set up in my mind. Then I made it. It was a DISASTER. It turned out absolutely nothing like I expected. I marked that idea in the book under “flop” and went back to the drawing board. Sometimes flops happen. I’ll continue to work on that idea, but at a later date. No time to dwell. It’s Thursday and we’ve got television to watch and empty popcorn bowls to fill.
Since I am really committed to posting a fun popcorn recipe each week, I had to come up with something fast to replace my popcorn tragedy. Inspiration struck when I saw a box of little cookies. Mini Nilla Wafers. I don’t usually eat them plain, but I do eat them when they’re in banana pudding, so I decided to figure out how to make banana pudding into popcorn. Fortunately, it worked! I’m convinced popcorn is a really perfect base for lots of flavors, and this one is no exception. Popcorn can be made into banana pudding, and it’s delicious. Here’s how to enjoy this southern dessert treat in popcorn form:
8 cups Popcorn, lightly salted
2 cups Mini Nilla Wafer Cookies (can use crumbled regular-sized cookies too)
1/2 cup Banana Chips (freeze dried or regular work fine)
4 Tablespoons Butter, Melted
1/2 teaspoon Vanilla Extract
1/2 packet Banana Pudding Mix
2 ounces White Candy Melts or White Chocolate, melted
Place a sheet of parchment paper on a large baking sheet. Set aside.
Combine popcorn, nilla wafers, and banana chips in a large bowl. Combine melted butter and vanilla, then drizzle over popcorn mixture. Stir. Sprinkle banana pudding mix over popcorn mixture and stir well to combine. Pour mixture onto prepared baking sheet and drizzle with melted candy melts or white chocolate. Let harden. If using the candy melts, they will harden a bit faster than the white chocolate, but either will work. Enjoy by the handful!
