I was reading an article recently, and it described Thursday as Pre-Friday. So instead of Popcorn Thursday, I guess it could be Popcorn Pre-Friday, for alliterative purposes. Either way, I’m still loving the excuse to snack on the regular. Today’s installment is the fourth feature and the first appearance of peanut butter on the ingredient list. If the deliciousness of this recipe is any indication, it will show up again.
This popcorn is just silly good, and Husband-Face is a peanut butter junkie, so I’m thinking more popcorn should be paired with peanut butter. And it may be gilding the lily, but the sprinkle of Reese’s Pieces really reinforces the creamy peanut butter ganache, making the whole bowl taste like one giant Reese’s Pieces. It’s a little gooey, a little crunchy, a little salty, and a whole lot of scrumptious. You’ll want to make it right before you’re ready to eat it, that way you can take advantage of that lovely texture. Here’s what to do:
9 cups Popcorn, lightly salted
1/4 cup Brown Sugar
1/4 cup Maple Syrup (use the real stuff here)
1/4 cup Sugar
1/2 cup Peanut Butter
1/2 teaspoon Vanilla Extract
1/2 teaspoon Butter Extract
2 Heavy Whipping Cream
Reese’s Pieces, for sprinkling
Combine brown sugar, maple syrup, and granulated sugar in a small saucepan. Bring to a boil and simmer for 1-2 minutes.
Remove from heat and stir in peanut butter, vanilla, and butter extracts. Stir. Add cream and stir until smooth.
Drizzle ganache over popcorn, stirring to coat. Let cool, then sprinkle with Reese’s Pieces. Enjoy slightly warm for the optimal gooey peanut butter texture.
