Hi there, Popcorn Thursday friends. I’m bringing you popcorn visions of chocolate, cherries and pecans today for our weekly snack. I was inspired by a bread I had once in a bakery and I loved the flavor combination. I’m not a huge fan of white chocolate on its own, but I feel that it works with popcorn because it balances out the salty, buttery flavors perfectly. The other great thing about this combination is that you can easily substitute one ingredient for another with equally delicious results.

White Chocolate Cherry Pecan Popcorn
9 cups Popcorn, lightly salted and picked through for unpopped kernels
3 Tablespoons Butter, melted
1 Tablespoon Sugar
1/4 teaspoon Cinnamon
Pinch Nutmeg
1/2 cup Dried Cherries
1/4 cup Pecans, Toasted
4 ounces White Chocolate, melted
In a large bowl, drizzle the butter over the popcorn and toss to combine. In a small bowl, combine sugar, cinnamon and nutmeg, and sprinkle over the buttered popcorn. Toss to combine well and spread onto a baking sheet lined with parchment paper.
Sprinkle the dried cherries and toasted pecans over the popcorn, then drizzle with melted white chocolate. Let sit for about 25-30 minutes for chocolate to harden. If you’d like to switch it up a bit, gently mix in the white chocolate instead of drizzling it over the popcorn and pour the mixture onto baking sheet. Let chocolate set and break into clumps with your hands. Store any leftovers in an airtight container. This will also make great gifts packaged in a clear bag or a box and tied with ribbon or twine.
