We’re another Thursday into the Popcorn Thursday features, and this week I thought I’d add something else to the mix besides popcorn–corn chips! Of course popcorn is still the main ingredient, but I thought the addition of corn chips would be kind of fun and it gives us a reason to eat chips and popcorn at the same time.
Since both are made of corn, the flavors work well together and we get an additional texture to keep things interesting. The corn chips also add a toasty corn flavor while the popcorn keeps things lighter and a little sweet. I decided to go with some of the flavors that we like when we’re eating corn on the cob, and it is just as tasty here. I’ve added lime juice, lime zest, salt and butter to our popcorn and chip mixture and it makes for a salty and citrus-y snack just perfect for eating by the handful. In fact, my resident testers had several handfuls right after I photographed it, which was a good thing because our popcorn bowl is now low. Fortunately, it is really easy to make more! Here’s how to do it:
7 cups Popcorn
2 cups Corn Chips
3 Tablespoons Butter, Melted
Zest of 2 limes
Juice of 1 lime (zest the lime before juicing to make your life easier)
Fine Salt or Sea Salt
Preheat oven to 200 degrees. Line a large baking sheet with aluminum foil or parchment. Set aside.
In a small bowl, combine melted butter and half of the lime juice.
In a large bowl, combine popcorn and corn chips. Drizzle over the butter mixture and sprinkle with salt, stirring to combine.
Pour onto baking sheet and spread out. Place in oven for 10-12 minutes, or just until the popcorn has dried out a bit and become crisp, stirring once halfway through.
Remove from oven, and while it is still warm, sprinkle over remaining lime juice and lime zest. Toss to combine and serve.
This is really easy to snack on, and if you want to take it a little further, add a sprinkle of chili powder and cotija cheese. It’ll be like having Elote (Mexican Grilled Corn) in a bowl! Street food at it’s finest.
