Over the last couple of years, I have been an avid reader and fan of Donna Hay magazine. I love the recipes, the clean photographs, the thick paper…just everything. It can do no wrong in my eyes. Except that it isn’t published more often. I suppose that bi-monthly schedule is part of what allows the magazine to have such rich content. I’ve tried many of the recipes and have been pleased with how they turn out, and one of them is these pork sliders. I tweaked them a bit from the original recipe, not because there was something wrong with it; I just wanted to include ingredients I had on hand. They turned out plate-clearingly good, so of course I had to share them with you.
1/3 cup Mayonnaise
2 cloves garlic, minced (divided)
1 medium Green Apple, sliced into matchsticks
2 cups Coleslaw Mix
Kosher Salt and Black Pepper
1 lb. lean Ground Pork
2 tablespoons prepared Creamy Horseradish
1 tablespoon Stone Ground Mustard
6 small Ciabatta or Kaiser Rolls
4 ounces sliced Colby Jack or Havarti Cheese (may substitute any personal favorite)
Mix mayo and 1 clove of the minced garlic in a small bowl. Season with salt and pepper. Set aside.
Combine apples and coleslaw mix in a medium bowl. Put 2 tablespoons of the mayo mixture into the bowl and toss well to combine. Cover with plastic wrap and set aside.
Place the ground pork, remaining clove of garlic, horseradish, and mustard in a medium bowl. Season with salt and pepper, and mix until well combined. Divide mixture into 6 patties. Preheat a skillet over medium-high heat. Brush the halved rolls with olive oil and cook, cut-side down, for 1 minute or until lightly charred. Set aside.
Spread the rolls with the remaining garlic mayo and top with the patties, cheese, and slaw. Serve with remaining slaw, chips or our favorite, sweet potato fries.
This recipe is easy to double or triple, so add it to the menu for your next gathering.
