Today is the final day in the week of quick meals, and we’re ending with an all time favorite for nights when we need food fast…PIZZA! But we’re not doing a clone of pizzeria pizza, we’re making a childhood favorite: French Bread Pizza. I used to love when we had french bread pizzas in the freezer. My favorite was pepperoni; so easy to toss in the oven straight from the freezer, and you had crunchy-cheesy pizza in minutes. So good.
Last night, I found myself on the losing end of the clock and needed to put something together before it got any later. I had a loaf of French bread, a little marinara and cheese leftover from the meatballs earlier this week, and combined with a few toppings, we made pizza. We were happily eating within 15 minutes and it tasted like a fresher version of the freezer standby. Here’s what we did:
1 loaf of French Bread, halved lengthwise then crosswise
2 tablespoons Olive Oil (divided)
3/4 cup Marinara Sauce
1/2 teaspoon Dried Oregano
1/4 teaspoon Dried Basil
8 ounces Mozzarella
Various toppings such as Pepperoni, Veggies (pictured here: Baby Arugula), Herbs, Parmesan
Preheat oven to 375 degrees.
Place bread on foil-lined sheet pan and drizzle with 1 tablespoon of olive oil. Bake in preheated oven for 3-4 minutes, until slightly crisp, but not browned.
Meanwhile, combine marinara, oregano and basil in a small bowl and heat in microwave for 1 minute and stir.
Remove bread from oven and top with sauce, toppings and cheese. Bake until melted, or broil, watching closely until cheese is melted. Top with any desired fresh toppings and drizzle with remaining olive oil. Dig in and marvel at how much it tastes like the pizza from the freezer, but better! Yum!
